Ingredients
1 can black beans (540 mL), drained and well rinsed
2 tablespoon cocoa powder
3/4 cup quick oats
1/4 cup flour
1 pinch table salt
1/2 cup maple syrup or honey
1/4 cup vegetable oil
1/2 teaspoon baking powder
1/2 cup chocolate chips
Optional: 1/2 cup walnuts or almonds
Instructions:
Preheat oven to 350 F.
In a food processor, combine the black beans, cocoa powder, quick oats, flour, table salt, maple syrup (or honey), vegetable oil and baking powder. Blend until smooth.
Transfer the mix into a bowl, and add the chocolate chips and walnuts (optional). Mix well with a spoon.
Line a square pan or glass container safe for oven baking with parchment paper. Pour the mix and press gently until the pan is completely filled.
Bake for 15-20 min or until the mix is set.
Fueling tip
Enjoy a square (or 2) with a side of fresh fruit for a more nutritious snack.
Add a protein such as 100 g of Greek yogurt to turn this snack into a small grab and go breakfast.
