Coconut Apricot Energy Balls

Ingredients:

  • 1/2 cup dried apricots

  • 1/2 cup quick oats

  • 1/3 cup peanut butter (or any other nut butter; can be smooth or creamy)

  • 1 tablespoon honey

  • 2 pinches table salt

  • 1/2 cup water

  • 1/2 cup coconut flakes (for coating)


Instructions

  1. Add dried apricots and quick oats to a food processor. Blitz them together until it becomes a paste.

  2. Add peanut butter, honey and salt to the food processor. Blitz well.

  3. Gradually add some water and blitz until the mixture becomes a sticky paste.

  4. Using your hands, scoop a spoonful (about 60 mL) of the mix into your hand and shape it into a ball. Repeat until all the mixture is done.

  5. Put the coconut flakes in a small bowl and coat every ball in it until all sides are covered.

  6. Place all the energy balls on a plate and let them cool in the fridge for at least an hour until they are well set.

  7. Enjoy!

Other coating suggestions: melted chocolate, crushed peanuts, mini chocolate chips.


Fueling tips

Make a large batch and freeze the leftover energy balls for a future use. These are perfect for long and slower pace activities such as hiking, leisure paddling or long trail runs. They can also serve as a post-workout snack.
