Ingredients for 2 servings
1 pack of Chow Mein style steamed noodles
Can be found next to the tofu at Superstore, Independent and Save-On Foods
Alternative: plain Instant noodles.
1 tablespoon of vegetable oil
1 clove garlic, minced
1 head of broccoli, in small florets
1 can of miniature cobs of corn, drained and rinsed
1 pack of fried tofu, each piece cut in half
Can be found at Superstore, Independent or Save-On Foods
Alternative: extra-firm smoked tofu
3 tablespoon of soy sauce or Maggie's seasoning sauce
Optional: 1 small bag of bean sprouts (optional because it's rarely available... but Save-On Foods typically has it, next to the bok choy!)
Instructions:
Rehydrate or cook the Chow Mein noodles as per the package instructions (depending on the brand). Set aside.
In a large pan or wok, on medium heat, heat the oil and sauté the garlic until lightly golden.
Add the miniature cobs of corn and broccoli florets and cook until the broccoli is al dente.
Add the fried tofu and the Chow Mein noodles.
Add the soy sauce or Maggie's seasoning and stir well.
Optional - add the bean sprouts and lightly toss them in the mix to keep their crunch.
Serve hot.
